Madras Masala Paneer

Ingredients:

  • 200g Paneer, cubed

  • 3 tbsp oil

  • 1tsp cumin seeds

  • 1 tsp garlic, minced

  • 1 tsp ginger, minced

  • 1-2 green chillies, minced

  • 1 onion, chopped

  • 2 tomatoes, pureed

  • 1 tsp red chilli powder

  • 2 tbsp Madras Curry Powder

  • Salt, to taste

  • Cashew and melon seed paste

  • Water, as required

  • 1 tsp kasuri methi (dried fenugreek leaves)

  • 1 tsp garam masala

  • Fresh coriander leaves, for garnish

Get Cooking:

  1. In a pan, heat the oil over medium flame. Once hot, fry the cubed panner a couple of times and keep it away.

  2. Add the cumin seeds, and then chopped/minced ginger, garlic, green chillies, onion and sauté until it turns translucent.

  3. Mix in the red chilli powder and Madras curry powder. Cook for a couple of minutes to enhance the flavours.

  4. Stir in the pureed tomatoes and cook until the oil begins to separate from the mixture. Add salt as per taste.

  5. Add the cashew and melon seed paste. Pour in water as needed to achieve your desired consistency.

  6. Add the fried paneer cubes, and stir well to coat the paneer in the spice mix. Allow it to simmer for about 10 minutes.

  7. Add kasuri methi, and garam masala. Stir gently to combine.

  8. Garnish with fresh coriander leaves. Serve hot with rice or naan.
